How to Make Homemade Vanilla Extract

Vanilla extract made with Vodka is one of the most simple and versatile baking staples that is a must in every pantry. Make this recipe and never run out (or pay an arm and a leg) again!

Not long ago, I realized I was out of vanilla extract and made a mental note to pick it up next time I was in a grocery store. Sure enough, I forgot about it until I really needed it for a recipe and I had a short window to complete it. I ran to the store and quickly grabbed what I thought was a reputable brand and headed home. I made my recipe and it tasted fine, but the smell from the vanilla bottle was not what I expected. It had an artificial scent. I checked out the ingredients and saw quite a few ingredients listed that explained the artificial smell and I vowed that I would be more careful when purchasing next time. I checked my receipt and saw that I paid a much higher price than I had expected. I then did a quick internet search and found that vanilla extract can be quite expensive, especially for good quality. Then I came across a recipe. It had never occurred to me that I could make my own vanilla extract at home ( it was a really big “duh” moment…). After I perused a few recipes that were basically the same, I wondered why any of us are buying it at the store at all. Other than some time to allow the ingredients to meld, it is one of the easiest things you can do.

Homemade Vanilla Extract

Never buy vanilla extract again! It’s super easy to make with just 2 ingredients.

Yield: 6 8 oz bottles

Equipment

  • 6 8 oz glass bottles

Materials

  • 64 oz 80 proof vodka any brand
  • 30 vanilla beans

Instructions

  • Clean/sanitize bottles and lids
  • Slit open the vanilla beans from end to end, but not removing the tips
  • Place 3-5 (more is better) vanilla beans in each 8oz bottle
  • Fill the bottles with the vodka all the way to the top
  • Close lids tightly
  • Store in a darkened place, like a cabinet or pantry
  • Keep closed for at least 2 months
  • Give the bottles a gentle shake weekly during this time to help the vanilla to disperse

Notes

  • This vanilla extract can be ever evolving. As you use it, feel free to add more beans and top off with vodka. You’ll never run out!
  • For a twist on a traditional vanilla extract, use bourbon, rum or brandy in place of vodka ( or any spirit that is 80 proof, or 40% alcohol).
  • This makes a lovely holiday or housewarming gift!

I am so thrilled that I came to my senses and made my own vanilla. Not only can I control the quality of ingredients, it’s less expensive and easy to do.
