Gluten-Free Chocolate Chip Banana Muffins

Do you have some bananas sitting on your counter that need to be used up? I know I always do. Try this gluten-free recipe for chocolate chip banana muffins. They are the perfect breakfast, snack, or dessert. Everyone in my family (on a gluten-free diet or not) goes crazy for these!

Gluten-Free Chocolate Chip Banana Muffins

Delicious, moist and chocolatey- everyone loves these muffins!

Ingredients
  

  • 3 bananas, mashed
  • 1 egg, beaten
  • 1/2 cup vegitable or other mild oil
  • 1/2 cup sugar
  • 1/2 tsp salt
  • 1 1/2 cup gluten-free flour replacement
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/3 cup chocolate chips

Instructions
 

  • Preheat oven to 350 degrees Farenheit.
  • Mix all dry ingredients EXCEPT CHOCOLATE CHIPS in a bowl.
  • Mix all wet ingredients in a separate bowl.
  • Add wet ingredients to dry and mix well.
  • Add chocolate chips
  • Divide batter evenly into 12-18 muffins in muffin pans.
  • Bake for 23-27 minutes (or until golden brown on top and a toothpick can be removed from the center of the center muffin cleanly).

Notes

These gluten-free chocolate chip banana muffins are a favorite in our house for breakfast, snack and dessert-Most can’t even tell they are gluten-free!

Recipe Notes:

I adapted this recipe from a few I found online that were for regular wheat flour muffins. This recipe can be made exactly the same with regular flour. Also, depending on the sweetness of the bananas, they can be made with less added sugar. I have used up to 1 cup and used as little as 1/4. The only difference is the cooking time. I find that gluten-free recipes take just a little bit longer to bake than regular wheat flour recipes.

Another option is to add nuts to this recipe. If you love banana bread with walnuts, for example, you could easily add them (acout 1/4 cup).

The Chocolate chips are a yummy addition, but I have a child who hates chocolate (so weird…) and I make a small batch without chocolate chips for them. This recipe is really versatile!
